Butterscotch Gingerbread People

1 small box butterscotch pudding mix (cook & serve)
1/2 cup butter, softened
1/2 cup brown sugar, firmly packed
1 large egg
1-1/2 cup all-purpose flour
1 teaspoon ginger
1/2 teaspoon cinnamon
1/2 teaspoon baking soda
decorations or icing

Preheat oven to 350 F. Cream pudding mix, butter and brown sugar in a mixing bowl. Beat egg in. Add dry ingredients and mix until blended. Roll out on floured board and cut with cookie cutters. Add candy buttons, cinnamon candy hearts or other decorations as desired. Bake for approximately 10 minutes and cool on baking sheet 5 minutes before removing to a cooling rack. Cookies may then be decorated with icing as desired. Makes appx. 12 large cookies or many smaller ones, depending on size of your cookie cutters.

Would make this again.
I loved the Butterscotch Gingerbread People Cookies. I think they were great. I tried them for 13 min. so they were a little more baked. Makes it easier to eat, so they don't crumble fast with the kids picking them up to eat. I also want to try some differnt pudding flavor's to change the recipe a little next time.

Would make this again.
I used to cook for a preschool and all the children helped make them and they always turn out. Then we would read the story about gingerbread people their would be a 2 ft gingebread person with a clue were to find the GB peole the next day they had ran away. So the children where left clues until they found the GB people. It was great fun since you may not celebrate christmas!
