Chocolate Coconut Bars

4 cups crushed graham crackers
1 cup butter, softened
1/2 cup powdered sugar
2 cups shredded coconut
1 (13-ounce) can evaporated milk
1 teaspoon vanilla extract
1 cup slivered almonds
12 oz. chocolate chips

Preheat oven to 350F. Mix graham crackers, butter, and powdered sugar. Pat into the bottom of a 9"x13" pan. Bake 10 minutes. Mix coconut, milk, vanilla, and almonds. Pour over crust and bake 10 minutes at 350 F. In a double boiler over low heat melt chocolate chips and spread on top of bars. Cool. Cut into squares.

Makes about 24

Would make this again.
would use sweetened condensed milk instead of evaporated milk and dark chocolate icing as chocolate melted goes hard when cold. Lovely bars.

P,s, you can Vari them by trying brandy essence in the mixture.

Would make this again.
Great taste but a little milky - are you sure that shouldn't be sweetened condensed milk instead of evaporated milk? Refrigeration did help but the chocolate topping still separated from the rest when cut into bars.
