Chinese Fortune Cookies1 cup sifted all-purpose flour1/4 teaspoon salt 2 tablespoons cornstarch 6 tablespoons white sugar 7 tablespoons salad oil 1/3 cup egg whites 3 tablespoons water
Preheat oven to 300 degrees. Stir together sifted flour, salt, cornstarch and sugar. Add salad oil and egg whites and stir until blended. Line a cookie sheet with foil. Drop level tablespoon of batter for 6 cookies. Use back of spoon to spread batter evenly into 4-inch circles. Bake for about 20 minutes. I do not recommend this recipe!! My daughter's class is studying China. She had to make Chinese Fortune Cookies from scratch. It was a disaster. After 20 minutes at 300, you will have 6 hard brown frizbees. After 10 minutes at 300, you will have soft cookies that crack in half as soon as you fold them. At 5 mintes (can you tell, I tried my best to figure out the right timing?) the cookies still broke when being folded. After wasting my time and raw materials, at 8:45pm at night, I had to go to a Chinese restaurant to buy them. For $3.60, it was a much better value than making from scratch and I actually had 3 dozen, nicely wrapped, perfect cookies when I got back home. Something is wrong with this recipe. Would make this again. it was really good! e
